There are many versions about the origin of the panetón. One of the most popular is the story of an Italian nobleman called Ughetto Atellani de Futi, who fell in love with Adalgisa, the daughter of a baker whose business was going through difficult times. The nobleman's family forbade the relationship, so the young man pretended to be a baker's apprentice named Toni. In his eagerness to help Adalgisa's family, he decided to experiment and added sugar and butter to the mixture they always used. The result: a sweet bread that became very popular and attracted new customers. This helped the business to recover, a situation that made the young man happy. Seeing that the success of his accidental recipe, days before Christmas, he added raisins and caramelized shells to his mixture creating the "Pane di Toni". This delightful creation not only conquered the young woman's heart, but made the business of Adalgisa's father even more popular, so much so that the new baker's family finally agreed to let the young couple marry… This is how the recipe for the panetón was born!
